Red Wine by Hall from Napa Valley, California. Hall 2004 Napa Valley Cabernet Sauvignon has been blended entirely from their premier estate vineyards throughout Napa Valley. The wine delivers voluptuous notes of ripe blackberry and cassis with sweet aromas of nutmeg, vanilla and coffee. The palate displays supple, silky tannins with a lingering sweetness from its fruit-driven finish. A well integrated oak profile in the mid palate lends depth and complexity, allowing this wine to evolve further in the bottle over time. This wine will continue to drink well and age gracefully over the next ten years.

Red Wine by J. Lohr from Napa Valley, California. The 2003 J. Lohr Carol's Vineyard Cabernet Sauvignon has dark red color with excellent depth. The aroma is dominated by cherry and currant fruit with hints of vanilla and spice coming from the well-seasoned oak. On the palate, the fruit is again dominant from the front to rear palate. The tannins are soft, but complement the full palate and add substance to the finish and length of the wine. The high ratio of Petit Verdot fruit enhances the wine's breadth but also ensures that it ages well for the next 15 years. In its youth, a braised meat dish will complement the wine's sweet fruit character, and it will pair equally well with your favorite steak.

Quite round, even lush, on the palate, but the red and dark fruit flavors convey impressive structure and focus thanks to suave tannins and subtle acidity. With air, this developed a sweet cherry flavor, with hints of smoky herbs and cured meat. The aroma is a meld of briar, red currant and black olive flavours through to black cherry and plum skins. The palate opens with the sweet berry richness of red currants and dark chocolates, merging into a full bodied wine with a nice fleshy extract. This intensely inky-colored Cabernet Sauvignon wine is grown in the well-drained, stoney and iron-rich soils of the Weir Family Vineyard along the Silverado Trail, one mile south of the famed Stags' Leap appellation and ten yards from the Oak Knoll District, the Valley's newest sub-appellation. The rich, spicy nose of baker's chocolate and black cherry compliments its brooding black licorice, black cherry and cranberry on the palate. Blend: 97% Cabernet Sauvignon, 3% Cabernet Franc The nose starts off with dark, jammy fruits, cedar wood spice, clove and toasted marshmallow. Bright cherry fruit on the entry with notes of dark cocoa. Smooth, lingering tannins lead to a rich, silky finish. Will age nicely for the next 5-7 years.

Red Wine by Moon Mountain from Sonoma County, California. Blend: 79% Cabernet Sauvignon, 15% Cabernet Franc, 3% Merlot, 2% Malbec, 1% Petit Verdot The fruit for Moon Mountain 2004 Estate Reserve Cabernet Sauvignon was 100% estate grown, hand harvested and field sorted into small bins. Fermentation took place in open-topped tanks, with each lot handled separately. The wine is 100% free run (the juice that flows freely from the grapes without pressing). Barrel aging took place in Moon Mountain's deep caves, which provide a constant temperature of 60?F and very high humidity. They used 100% French oak barrels, 75% of which were new, and aged the wine for 21 months before lightly filtering and bottling. This boldly flavored Cabernet Sauvignon is rich in mountain blackberry and ripe currant flavors accented by hints of wild Sonoma sage, cedar and roasted coffee. Pair this wine with rich foods such as grilled filet mignon, roast rack of lamb and hard, aged cheese.
