White Wine by Joseph Drouhin from Burgundy, France - regions. In the southern part of the Cote d'Or, a few miles South of Santenay, lie the vineyards of Rully. It is a lovely area, part of the Region of Mercurey. Both Pinot Noir and Chardonnay are grown on the brown calcareous soil, the Chardonnay being found mostly on clay and limestone. As in the rest of Burgundy, the continental climate, with its warm Summer and mild fall, is very favourable to the good maturity of the grapes. Rully is a delicious white Burgundy wine which resembles the whites from the Cote de Beaune: a luminous, golden green colour, a toasty, fruity nose, a refined, elegant body with floral and cinnamon notes. This exquisite wine, which goes so well with delicate fish and most shellfish, is also an excellent value.

White Wine by Joseph Drouhin from Burgundy, France - regions. St. Veran's Jurassic chalky soil, a continuation of the limestone strata found in the Côte d'Or, is ideal for growing Chardonnay grapes. Picked by hand, the grapes (100% Chardonnay) are gently pressed. Bottling is usually done in the Spring following harvest. Saint-Véran is very close stylistically to Pouilly-Fuissé, with its golden green hue, its intense fruity, flowery nose and its refreshing flavours. It can be enjoyed very young, two to three months after bottling. Yet, give it one or two more years to fully appreciate its complexity. 11 to 13oC is the correct temperature to serve a Saint-Véran. It marries well with hors-d'oeuvre, delicately flavoured charcuterie, oysters, mussels and any other shellfish.

White Wine by Macon-Lugny from Burgundy, France - regions. The Les Charmes vineyard is specially prized for the age of its vines, some as old as 100 years, and its exceptional southern exposure. The wine, vinified and bottled at the nearby Cave de Lugny, is the best selling white Burgundy in the United States. Vinified in stainless steel vats and bottled with no oak aging, Les Charmes is richer and more intense than most Macons. Medium body, clean and fresh. Serve well chilled as an aperitif, or with seafood dishes without rich sauces, chicken, veal and pork.

It is remarkably adaptable to soil and climate, and will always produce a wine with fine rounded fruit that is balanced by good acidity. Whereas in Burgundy wines made from Chardonnay may need several years to be at their best, wines from the Midi show their fruit early and should be drunk within two years of the vintage.
