White Wine by Adelsheim from Willamette Valley, Oregon. Pinot Gris, originating in Burgundy like the other members of the Pinot family, has had a long history all over Europe. In recent times, versions from Alsace and northern Italy have been the best known. Oregon winegrowers introduced Pinot Gris to New World viticulture and in forty years the variety has become the white wine of Oregon. Adelsheim Vineyard can lay claim to being one of the very oldest producers of this variety outside of Europe. With this wine, Adelsheim's 23rd vintage, their experience shows - they've long been acknowledged as producing a reference standard for the Oregon style. Crisp, bright flavors have always been the hallmark of Adelsheim Pinot Gris. In the 2006 vintage, there is beautifully delineated Bosc pear, white peach, and Winesap apple, with a touch of spice. It pulls off the difficult feat of providing a gentle creaminess that lends a mouth-filling texture and long finish, yet still impressing as a wine that's crisp and clean. Try this wine with mildly spicy foods (such as ceviche), not so mildly spicy Thai cuisine, rich fish entrees, and even classic oven-roasted fowl.

White Wine by Elk Cove from Willamette Valley, Oregon. The Elk Cove Vineyards Pinot Gris starts out with sweet aromatic fruits of the tropics; pineapple, guava and a touch of honeysuckle, hinting of springtime freshness, while also giving crispness on the palate with citrus and grapefruit. Yet true to the Elk Cove Vineyards' style, there is a rich mouthfeel to give a full and satisfying balanced finish. Drink this lovely white wine as an aperitif or with a variety of food pairings from salmon and main-course salads to Asian and Thai influenced dishes. The Willamette Valley has a suitable climate for this delicate grape variety-enough sunlight and warmth for ripening and cooler night temperatures to retain varietal character. To preserve the freshness, it is whole-cluster pressed, and then fermented at very cool temperatures in small stainless steel tanks, which accentuates aromatics and enhances the richness and viscosity. The fruit is hand-harvested from select hillside vineyards in the northern Willamette Valley. Our estate Pinot Gris is planted in a high-density format, which undergoes shoot and crop thinning for low yields.
