White Wine by Pascal Jolivet from Loire, France - regions. Grape Type: 100% Sauvignon Blanc. Vinification: Grapes come from 20 acres in 3 separate vineyards owned by Pascal Jolivet in the villages of Tracy, Les Girarmes, and St. Andelain; and additional sourcing from Les Loges. These constitute a large diversity of glacial soils, differing from village to village. Les Loges: very calcareous. Full, firm wines. Saint Andelain: clay-siliceous and siliceous. Provide fruit, bouquet. Tracy sur Loire: sandy and limestone base. Delicacy, aromatics. Vinification is very traditional slow fermentation (6-8 weeks) with natural yeasts and no malolactic. The wine is left on the lees for a minimum of 4-6 months. Bottled between May and September. Tasting Notes: Pale straw in color. Piquant, minerally, austere, and very clean nose. The palate is open, fresh, and direct, with ripe fruit flavor. Clean biting finish; very youthful; minerally flavors resurface. Food Match: sushi, shellfish, pork, fish, Asian cuisine.

White Wine by Concha y Toro from Chile, South America. Grapes were selected from Lot 30 in our El Triangulo vineyard, in the Casablanca Valley, where the ocean influence allows for slow ripening. This, in turn, helped 100% of the flavors of this aromatic variety to build up on the grape skin. The gravelly soil with a permeable stratum is very favorable. The south-facing hillside location is perfect for this variety. Region: Casablanca Valley, Chile Grape Variety: 100% Sauvignon Blanc Description: Fresh with of shades of citrus and passion fruit intermingled with hints of sweet green peppers. Exhibits the unique, powerful, assertive character and distinctive style of cold-climate, New World Sauvignon Blancs. Hand picking and reductive handling produced a greenish juice brimming with tropical aromas. Fermentation took place at temperatures ranging from 13?C to 17?C. Grapes were picked in three stages in order to increase the range of aromas and flavors available for blending. The wine was aged in stainless steel tanks over light lees for nine months. A perfect complement to shellfish and lightly spiced sushi.

The nose is very fresh, very clean with notes of lime peel, green herbs, black currant; typical, not aggressive. On the palate it is fresh and tightly wound; acidity is tempered by very subtle residual sugar; very clean; alive, racy, youthful. Overall, a dry and elegant wine, well balanced. The different origin of soils express fully their differences and their similarities. Slow evolution, very typical Sancerre. White Wine by Ch. de Sancerre from Loire, France - regions. Visual: Clear, pale gold in color. Nose: Nice intensity. Floral notes dominate the first nose giving finesse and elegance. Once the wine is allowed to breathe, slight nuances of vanilla surface and open up to fruity aromas of yellow peach and plum. Palate: Soft attack, nicely rounded with lots of richness, yet still very fresh. Notes of fruit dominate (apricot, yellow peach). Harmonious on the palate with excellent length.

White Wine by Clos Pegase from Carneros, California. The spring of 2005 was very rainy, which slowed the usual early growth. A moderate and dry summer led to a mid-September start to harvest. The 2005 wines, of which the Sauvignon Blanc is the first to be bottled, are uniformly pure of fruit and elegant. The 2005 vintage is filled with vibrant and pure Sauvignon Blanc varietal character: gooseberry, fresh cut hay, grapefruit, kiwi and quince. The palate is soft and supple on entry, with expansive fruit on the middle. Bright and refreshing acidity tempers the opulent and supple mouthfeel and finish.

Half of Gamble Vineyard is planted to the Sauvignon Musque clone, a third generation of the original bud wood brought from the Loire Valley in the 1950s - the other half to the Preston Clone, descended from the Graves region of Bordeaux.
